Headed to a party or potluck and need to make a quick and easy dessert? These Rolo cookies are a win at every single party. I NEVER take any cookies home when I bring these babies along.
The beauty of these cookies is that they’re only 4 ingredients and only take 30 minutes to make.
They’re the perfect cookie to get your feet wet if you want to start baking with your kids. With minimal prep and clean-up, it’s easy to let your little ones get hands-on experience in baking.
With only 4 ingredients (and an optional 5th), Rolo Cookies are quick and easy to make, even if you only have an hour until party time.
I always make sure to have the ingredients stocked in my pantry in case we get invited to a party last minute. (I hate showing up empty-handed!)
A few notes on this recipe:
- You can use any chocolate cake mix for this recipe, but I’ve found the best one is a Devil’s Food Cake mix. There’s so much more chocolatey goodness in that mix.
- If you can find Rolos unwrapped, it saves a lot of extra time! If I have extras leftover, I close up the bag and put them in the freezer for the next time I bake.
A word of warning: The ooey, gooey, deliciousness of chocolate and caramel is hard for anyone to resist! Make sure you’re going somewhere to share them so you’re not tempted to eat them all by yourself!
Rolo Cookies
Ingredients
- 1 box Super Moist Devil’s Food Cake Mix
- 24-36 unwrapped Rolo Chewy Caramels
- 2 eggs
- 1/3 cup vegetable oil or avocado oil
- 1/3 cup powdered sugar for dusting (optional)
Instructions
- Preheat the oven to 350 degrees. Combine the cake mix, eggs, and vegetable oil and stir with a spoon or combine with your hands to form a dough.
- Using a cookie scoop, roll the dough into little balls (about 1-inch in diameter) with 1 Rolo inside each ball.
- Bake for 10 minutes. Allow the cookies to cool on the cookie sheet for about 10 minutes to allow the caramel to set.
- Dust the cooled cookies with powdered sugar (optional).
Notes
- I like to use parchment paper on my cookie sheets especially for this recipe. Clean-up is easy if the caramel leaks out during baking and makes it easy to save the powdered sugar after dusting.
- I recommend buying the Rolos that are in the roll if you can. It saves a lot of time if you don’t want to sit there unwrapping a bunch of candies. If you have little helpers, unwrapping Rolos might be a good job for them.
