I get a lot of friends asking me what I make for dinner. I get it. It’s hard to come up with ideas for dinners. (I remember my mom struggling with this when I was growing up.) So I thought I’d start a little mini series on what we’re eating. This meal plan is for the week of June 26-July 2.
To preface this a little bit: I grocery shop on Wednesdays because Sprouts does double-ad Wednesdays. I posted a picture of this week’s grocery haul on Instagram Stories, which is how this series came about. I’ll be writing deeper posts about my meal planning process, where I shop, finding recipes, why we eat (mostly) Paleo, and how I meal prep in other posts.

Today’s post is what we’re eating June 26 to July 2.
This week’s grocery haul:
Total: $70.76, earned $0.30 back using Ibotta (raking in the big bucks!)
Breakfast
Paleo “Buttermilk” Pancakes from Paleo Running Momma. I haven’t tried this recipe yet, but I like how the texture looks in the pictures. Plus, pancakes are easy to freeze for later.
Eggs, bacon, and veggie muffins. I don’t have a recipe for this because I’m going to make it up, but it will probably have red bell pepper, zucchini, and possible spinach as the veggies. But this recipe looks pretty good too.
Lunch
Bacon Scallion Chicken Salad from Paleo Running Momma. I haven’t made this one yet either, but I’m trying to change things up. I’ll serve it over spinach.
Italian Tuna Salad from the Simply Real Health Cookbook served on top of Simple Mills pepper crackers.
Turkey Avocado Sandwiches with homemade bread (find the recipe in my Stories Highlights), Annie’s mac and cheese –these are for Juliana.
Dinners
Loaded Taco Sweet Potato Sliders from Paleo Running Momma. This is one of our favorites. It sounds like a strange combination, but you can’t go wrong with bacon and guac.
Tomato Basil Turkey Meatloaf from Little Bits Of. I’ve been trying to find good ground turkey recipes, and this one is good. The fresh basil really makes it …the basil is care of my mom’s massive herb garden.*
Cauliflower Risotto with Bacon and Mushrooms from Paleo Running Momma paired with Italian sausage. (I was stalking her Pinterest this week. Can you tell?) I’ve never made this one either, but I have a cauliflower from last week that I need to use. I’m not fond of cauliflower, so hopefully this recipe makes it taste better.
Pesto Salmon. I use this method for baking salmon and just top it with a simple pesto sauce.*
Grilled Chicken. We have a Traeger, so I’ll add a rub or marinade of some sort to the chicken and smoke it on the grill for a while.*
Chicken & Olives from the Frugal Gourmet. This is an old recipe my mom’s made since I was a kid. You can easily substitute the red wine with chicken broth.
*These meals are all served with veggies. I typically buy whatever’s on sale. So this week it’s artichokes (3 for $5, and Juliana and I are crazy about artichokes), broccolette, and asparagus. I also usually make roasted sweet potatoes as a side. And rice. Because I’m Asian.
Also, I don’t have 7 meals listed because we usually have dinner at my parents’ house one night a week.
Snacks
Guacamole with plantains
Salami from Applegate Farms
Baby carrots (I was buying whole but they weren’t getting eaten. Baby carrots are ready to go, so we’re eating them.)
Celery (here’s me hoping we’ll eat the celery …again)
Nectarines
Plums
Berries (strawberries, blackberries, raspberries)
Apples (with almond butter)
Cascadian Farms cereal (it was BOGO, and those aren’t cheap)
Black olives
Annie’s Bunny Grahams (Juliana begged me and I caved)
Plus I’ll probably bake another Zucchini Bread or a Paleo sandwich bread as an extra snack.
Pantry Restock
Tomato paste
Milk (for the little)
Onion
Garlic
Raw cashews (I’ll be attempting to make a vegan “cream cheese” for a fruit pizza to take to a 4th of July party next week …wish me luck.)
So that’s what we’re eating June 26 to July 2, with a break down of what I bought from Sprouts. We’ll have to go to Costco sometime this week to restock on meats and other bulk items, but this is basically what I buy every week.
