This week’s been buuuusy. We’ve been getting up early to go to VBS every morning. Well, I’ve been dropping Juliana off every morning then coming home to work or run errands. (I got my grocery shopping done in 30 minutes yesterday …oh yeah!) We did have to make a Costco run this week, though, in order to get the Week 5 Meal Plan to work …you know, so we actually have food to cook with.
Juliana’s been learning about Moses and the flight from Egypt at VBS. And it’s been leaving an impression. As we went through some of the aisles at Costco on Tuesday, she called out, “Let my people go!”
It would have been way funnier if other people were around to wonder, “What the heck is going on?”
Here’s the meal plan for this week.
Breakfast
Veggie Loaded Breakfast Casserole from Little Spice Jar –add crispy bacon bits to the top. It’s way better.
Lunch
Whole30 Paleo Asian Chicken Chopped Salad from TastyThin.
Dinners
Herbed Lemon Garlic Chicken Skewers from the Recipe Critic
“Breaded” Paleo Chicken Cutlets from Paleo Running Momma
Grilled Marinated Chicken with Veggies (and sweet potatoes).
P.S. To make the best sweet potatoes, preheat the oven to 400 degrees and line a baking pan with parchment paper. Cube sweet potatoes then toss with olive oil and TJ’s Everything But the Bagel seasoning. Spread on the parchment paper and roast for 20 minutes. So good.
Enchilada Stuffed Sweet Potatoes from Living Loving Paleo. In the heat, make the sweet potatoes in the slow cooker. Wash ‘em, then throw them in for 6-8 hours on low or 3-4 hours on high.
