I’m not much of a slow cooker fan BUT this slow cooker chicken tortilla soup recipe is a winner in my book. I found it years ago after I was first married, and to this day it doesn’t disappoint.
Why am I not a slow cooker fan? I think a lot of foods have a strange flavor to them when they’ve been slow-cooked. Maybe it’s all in my head but my family agrees.
So I only bust out the slow cooker for this soup and a couple of other recipes.
Two things I can say for the slow cooker:
- They’re great for those super hot days when you don’t want to turn on the stove or the oven.
- Having a hot dinner ready and waiting for you when you come home is such a cozy feeling.
The trick is having a really tasty recipe cooking inside!
This slow cooker Chicken Tortilla Soup is exactly the trick and is perfect for Taco Tuesday or for Slow Cooker Sunday.
One word of warning, if you make it while you’re going to be home all day, you’re going to be very hungry!
Tip: If you’re grilling chicken the night before, throw some extra on the grill to throw in the soup the next morning.
Or just buy a grocery store rotisserie chicken. 👍
Easy Slow Cooker Chicken Tortilla Soup
Equipment
- Slow Cooker
Ingredients
- 1 chopped onion
- 2 cloves of minced garlic
- 1 lb shredded or diced chicken
- 14.5 oz can diced tomatoes
- 1 ¼ cup enchilada sauce
- 1 4 oz can chopped green chiles
- 1 ¾ cup chicken stock
- 2 cup water
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp salt
- ¼ tsp black pepper
- 1 bay leaf
- 1 cup organic frozen corn
- 1 tbsp chopped cilantro
Toppings
- tortilla chips
- shredded cheese
- avocado
- chopped cilantro
Instructions
- Add chicken, tomatoes, enchilada sauce, onion, green chiles, and garlic into a slow cooker. Pour in water and chicken stock and add seasonings. Stir in the corn and cilantro. Cover and cook on low for 6-8 hours or on high for 3-4 hours. Top with your favorite toppings and enjoy!
